Rosemary and Basil Cod on Rice

Basil, fresh (minced)

Rosemary, fresh (minced)

Chives, fresh (minced)

Soy Sauce

White Onion, medium (minced)

Leek (white portion only) (minced)

Celery, small (finely chopped)

Garlic, minced

Ginger Root, minced

- In a bowl, marinade the Cod fillets in the lemon juice, salt, pepper, basil, rosemary, chives and soy sauce for 30 minutes.
- In an oven-safe skillet with a cover, saute the onion, celery, leek, ginger root and garlic until the onion is translucent.
- Add the fillets to the skillet and sear all sides until lightly browned.
- Remove from heat and cover. Put in a 350 degree oven for 20 - 30 minutes.
- Remove from the oven and serve over rice. Take the remaining marinade and bring it to a boil in a skillet. Pour this over the Cod fillets and rice.
