Ingredients:
2 bananas, sliced into rounds
6 Tbsp. Butter
1/4 Cup Brown Sugar
1/2 Cup Dark Rum
1/4 tsp. Cinnamon
1 pinch Nutmeg
Vanilla Ice Cream
6 slices square angel food cake
Directions:
1. In a hot skillet, melt 2 Tbsp. of the Butter and brown the slices of the angel food cake (toasting them until brown). If more butter is needed to brown all six slices, add more. Remove and set aside.
2. Add the remaining 4 Tbsp. of Butter and melt it over a med-high heat. Add the slices of bannana and saute until slightly browned. Add Cinnamon and Nutmeg.
3. Add the Brown Sugar and melt it completely over the Bannanas.
4. VERY CAREFULLY add the Rum and reduce until the liquid reaches 1/2 to 1/4 it's original volume. (NOTE: When cooking with alcohol, beware of fires. Be careful!)
5. In six separate dishes, place the toasted angel food cake and then place a dollop of Ice Cream in the middle of each.
6. Ladel the bannana mixture over the top of each and serve.
NOTE: If you feel comfortable with it, pour another Tbsp. of Rum over the finished dish and serve after lighting it on fire with a long, kitchen match. Again, burning alcohol can be dangerous; don't do this without appropriate fire-extinguishing equipment at hand!
This recipe makes 6 servings.
