Ingredients:
1 Baguette
1 Cup Roasted Red Peppers, diced
1 bulb Roasted Garlic
fresh Basil
1/4 cup sliced -not grated- fresh Parmesian Cheese
Extra Virgin Olive Oil
salt and pepper
Directions:
1. Slice the Baguette at an angle, making slices about 1/2-3/4" thick. Brush with some Oil and grill or saute in a skillet. (A grill pan is excellent for this, as is an outdoor grill).
2. When both sides of each piece are toasted (or have decent grill marks), re-brush the topside of each piece with some more olive oil.
3. Shred the basil with your fingers or slice it into a chiffonade and -in bowl- toss it with the red peppers. Season with salt and pepper.
4. Take the roasted garlic and smear it over the oiled surface of each slice of bread. Spread the basil/red pepper mixture over the garlic. Cover each, then, with cheese, concealing most of the red pepper.
5. Place in a heated, 300 degree oven for 12 minutes or until the cheese melts a bit.
6. Serve hot.
This recipe serves about 4-12.
