Ingredients:
2 handfulls cleaned, fresh Spinach
1 can Artichoke hearts
1 handfull grated fresh Parmesian Cheese
salt
1/2 medium Red Onion, thinly sliced
2 Tbsp. Balsamic Vinegar
4 Tbsp. Extra Virgin Olive Oil
1 tsp. Dijon Mustard
1 handfull croutons
Directions:
1. In a large bowl, blend the Vinegar, Oil and Mustard.
2. Cut each artichoke heart into quarters. Just before serving, add the artichoke, spinach and onion to the bowl and season with the salt. Toss lightly with the blended vingegar, oil and mustard.
3. Sprinkle with the cheese and croutons.
This recipe serves about 4-8.
