Ingredients:
1 cup uncooked long-grain rice
2-1/2 cups Chicken Broth
1 pinch Saffron threads
salt and pepper
1 clove garlic, minced
1/2 cup Shitake Mushrooms, chopped
2 Tbsp. Butter
Directions:
1. In a pot that can be covered, melt the butter and sautee the mushrooms and garlic until the garlic turns transluscent. Season with salt and pepper and add the threads of Saffron.
2. Add the rice and broth and bring to a boil. Reduce to a low simmer, cover and continue to simmer for 12 minutes.
3. Remove from heat and let stand for 5 minutes. Fluff rice with fork and serve.
This recipe serves about 4-8.
